Acetaldehyde is a naturally occurring chemical present in many foods, particularly fruits. With the assistance of anaerobic fermentation via micro-organisms such as yeast, acetaldehyde can be transformed into ethanol, a process put to good use in wine-making.

It is also found in car exhausts, perfumes, flavours, analine dyes, plastics, synthetic rubber, wood products, various synthetic substances and in the manufacture of food flavourings.
